Neapolitan pizza + natural wine · Carroll Gardens, Brooklyn

Lucia is 37. Still rising.

Lucia is our starter. Ma has fed her every morning since 1989; her daughter Marina built the oven. 72-hour dough, a leopard-spotted crust, and three natural wines on tap to argue with.

The family business

Meet Lucia. She's the starter.

Ma started feeding Lucia in a Bensonhurst kitchen in 1989 and never once missed a Sunday. Her daughter Marina grew up smelling it, left to go be an accountant for eleven years, and came home to build a wood oven in a Carroll Gardens corner room instead.

Ma still shows up to do the dough. Marina runs the fire. They disagree about hydration, loudly, in front of you. The pizza is better for it.

    What we believe

    House rules.

    1. Seventy-two hours.

The dough gets three days to rest. You get ten minutes to eat it hot. We think that's a fair deal.

    2. Fold it. Don't fork it.

Forks are for tiramisu. Fold the slice, lean in, wear it a little.

    3. The black bits are the point.

That's leopard spotting. It's flavour, not a mistake. Don't ask for it "less done".

    4. Wine should taste like somewhere.

If a bottle tastes like nowhere, we don't pour it. Small farms only, nothing added we can't pronounce.

    5. Lucia eats first.

The starter gets fed before the staff does. On Sundays we sing to her. Quietly. Mostly.

    6. No substitutions on the Margherita.

Yes, even you. Especially you. Order the Funghi if you want it your way.

A fictional corner in Carroll Gardens. Half the room and the whole bar are held for walk-ins, every night.

    Good questions

    Before you ask.

Anything else, call us. Somebody with flour on their hands will pick up.

    Do you take walk-ins?

Yes. Half the room and the whole bar are held for walk-ins every night. Booking just saves you the wait.

    Gluten-free or vegan?

The Marinara is fully vegan. We don't make a gluten-free pizza: the kitchen is full of wheat flour, so cross-contact is unavoidable. Tell us about any allergy when you order.

    How long does pickup take?

Usually 20 to 25 minutes, up to 45 on a busy Friday or Saturday. The pickup builder above gives you an estimate for right now.

Can I bring my own wine?

We'd rather you didn't. The list is short on purpose, and every bottle is one we'd drink at home.

    Kids? Dogs?

Kids, yes: high chairs and a plain Margherita on request. Dogs are welcome at the front tables.

    Is this a real restaurant?

No. Dough & Daughter is a fictional sample business: a design concept made by Hypeman to show what a small-business site can feel like. Nothing sent through it reaches anyone.
